de ser ciego en granada“

this phrase, discovered engraved upon a stone wall in granada, spain by happenstance, yet has stayed with me since the moment i discovered it. it reminded me of the simple staggering power of words and of views.

there is nothing in life

like the pain

of being blind

in granada.

i noticed it when i’d first arrived in granada. it was hotter i swear than i’d ever felt outside, even being from the south. the wheel on my suitcase, packed with a year’s worth of my belongings, had just broken off on the cobblestone streets. i’d dragged 40lbs of cumbersome luggage up granada’s many spanish steps to my hostel… just to learn that they had to given my room away. because i’d missed my check-in time. because i’d missed my train from sevilla. they’d tried to call, of course, but my phone had been stolen the night before.

and so there i was in my predicament. i couldn’t help it, i started crying. they booked me another hostel across town. completely defeated, i kicked my suitcase back down the steps. when i finally greeted it at the bottom of the steps,i found this phrase, engraved into a pillar on the wall. no hay nada en la vida como la pena de ser ciego en granada. and in my “misery” i paused. i breathed in. my lip stopped quivering. i noticed as the sun was setting, my eyes were drawn up the mountain just before me. and standing proudly in front of me the alhambra, illuminated. a site i’d been waiting to see my entire life. and the impact of it hit me all at the same time. and i cried, this time, not out of frustration, but out of pure gratitude. that i was in granada, and indeed, that i was not blind, in sight nor to any of the staggering significance that had brought me to this very moment. broken suitcases and overbooked hostels be damned. i was alive. and i was in granada.

there are so many scenes that have moved me to tears by their intense beauty. so many experiences that have made me uncertain if i’m even able to take them in. i’ve witnessed moments that have made me clutch my chest lest my heart jump right out because of the stunning humanity that exists all over the world. i’ve been reminded in those moments that no matter how difficult the path may seem at the time. I’ve learned that no matter how low the trough of the wave is, the crest will be so so high that you won’t even be able to see the bottom. significance hits you this way and sweeps you up, just at the right moment, and just in time. always. all you have to do is seek it.

so this is why we travel. to understand that there is nothing in life more painful than to remain stagnant in a world so beautiful, than to be deaf to “i love you” “te quiero” “je t’aime” in so many languages, to be numb to the tastes and flavors and traditions of so many rich cultures.

and to be blind

in granada.

tell me, then, what beautiful scene has left so so happy to have your sense of sight, and adventure, and the propensity to appreciate them both.

barcelona is a city that seems to need no introduction.

(however, i’ve given it one. just below… keep reading.)

i consider barcelona my birthplace, in a certain sense. this is where i was born as a traveler, where i gained my thirst for adventure, where i broke through my fear of leaving home, of being alone- where i sought a deeper understanding of myself and the world beyond virginia and the city responded with an outpouring of beauty, enchantment, wonder, and mystery. i have always felt that in a lot of ways, i owe that city so much- my sense of adventure, my aptitude for urban living, my appreciation for culture beyond my birthplace, my insatiable cravings for jamon. it resides on my heart and in my skin, so no matter where i travel, i’m never far.

these are the coordinates for barcelona, on my wrist. in case you want to begin navigating now. and want to hold my hand.

and for that, i’ve always wanted to pass along a guide to this enchanting city so that friends can see it through my eyes and my appreciation- so that they might procure more from it than the conspicious coastline, the oft-photographed architecture, the impenetrable soccer empire. that they will see the city as it is and how it will speak to them, with the knowledge that upon leaving, barcelona is something that will never leave them.

this guide began as something i wrote just after studying abroad for my best friend to use on a 5 day visit there. i had been back in the states for nearly 3 months and was having a terrible time assimilating back into the big-state school mentality in southwest virginia- but was suppressing everything i missed about barcelona and my european life in one big drawer in my bedroom that i never once opened. when i finally did, i brought the drawer out into the front yard of our white house and sat for hours, tears in my eyes, writing to her the most painful, sincere, and thorough travel guide i could muster. the original, written in complete stream of consciousness, can be very palpably digested here

.

DAY 1

today will be a day of gastronomical and mystical exploration as you consume art, architecture, tapas and wine in the oldest part of the city. bring your appetite for adventure and thirst for wine, your capacity to take in vistas beyond your previous realm of understanding, and some comfortable (yet stylish?) shoes. before you get started, reserve your tickets to the museu picasso– if you don’t do this ahead of time, you won’t get in. and you want to get in.

start your day wandering through the gothic quarter, the ancient mystical neighborhood in barcelona’s center. wander down carrer de la princesa, a street full of shops and restaurants that runs right through the center. stop at can cisa for a glass of rioja and to fill up your wine bota, directly from the barrel. let yourself get lost in the catedral de barcelona, a cathedral marked by its painful history, reverence to animals, and distinctive medieval archways and rooftop. make your way through the narrow cobblestone streets, toward the museu de picasso. before or after, stop into el xampanyet, one of the oldest and most typical catalan tapas bars in the city. try the stuffed mushrooms, and pick up the most important souvenir of your trip- an official JB siquenza wine bota. (this is NOT an option- it’s bee my most loyal travel partner and greatest souvenir to date.)

wander through the streets and into the placa de santa maria where you’ll find a beautiful basilica of the plaza’s patron saint, which is said to have been built as the “people’s church” of barcelona and is truly an icon of the gothic period in catalunya. also in this plaza are two of my favorite tapas bars, always nestled perfectly in the shadows of the majestic basilica. for inventive tapas and indulgent sweets (which also boasts the “best chocolate cake in barcelona” as they say) try bubo. for a more traditional experience, its neighbor al vinya del senyor, offers wines, cavas, and simple tapas (i recommend the smoked salmon, trust me.) if you’re looking to commit to a traditional spanish lunch, one of the most iconic restaurants in the city, head to el 4 gats, former meeting place for artists in the modernist period, with decor inspired by le chat noir in paris. live music daily and real catalan “food of the soul”, plan on having a real 2+ hour spanish lunch here. do not give in to the temptation to siesta post-lunch, way too much to see in this city! after lunch, stop by and marvel at the wondrous palau de music, an art nouveau and architectural masterpiece. wander from there into las ramblas, working your way east toward the sea, navigating through the web of streets dedicated to vendors, shopping, and pick pockets! no kidding, be incredibly vigilant walking through here. stop in any shop that strikes your curiosity, get lost down narrow paths of street peddlers, book stores, small art galleries, and charming boutiques. for food, if you’re still hungry, the attic is one of the only acceptable tourist restaurants in the area, and has a great rooftop, free glass of cava for all weary travelers, and is a peaceful alternative to the packed sidewalk cafes below. save plenty of time to get completely lost wandering around la boqueria, barcelona’s most famous market. visit el quim de la boqueria tapas bar in the back (if you’re lucky enough to find a spot) have some wine while you wander around.

as evening sets in, wind back through the born district, and try to time it so you catch a sunset through the iconic archway on carrer del bisbe. if you feel like having a late dinner, reserve a sofa at la fianna in the gothic quarter and dine like royalty while lounging in a bed beaneath gas-lit chandeliers (hint: don’t wear embarrassing socks). then pop over to small bar, my favorite little nook in the neighborhood. get the lemon and coffee shots to give you a jolt of energy before heading to the iconic harlem jazz club for live music and dancing, any night of the week. wander into la ovella negra if you’re feeling homesick- this unassuming door leads into a massive expat bar full of picnic tables, drunken cultural exchanges, and shitty sangria by the pitcher- and don’t think for a minute that means i hate it.

DAY 2

a day spent exploring barcelona’s coastline via bike. bring your bathing suit or your birthday suit and leave your sense of direction at home (it seems i’ve never actually left home with mine)- today is about getting lost and navigating back by the sea.

start your day at barcelona’s own Arc de Triomf, which just like the city is a bit more colorful, more contemporary, and rough around the edges than its parisian friend’s. slip over to Happy Bike Rentals to rent bikes for the day. from there bike straight into the Parc de la Ciutadella, which boasts barcelona’s parliament, a beautiful fountain (that yours truly may or may not have a significant piece of), and plenty of space to lounge and relax. there’s also a Zoo with pretty good hot dogs. fyi, the albino gorilla died back in 2004, but you wouldn’t know that based on his countenance being all over the city and the zoo. i spent a little too long searching for him at the zoo, even feeling very confident that i’d spotted him sleeping in his cage (which by the way, is still there. exactly as he left it. dishes in the sink, clothes set out on the bed for the next day and everything). don’t be tricked by this. snowflake resides only in the hearts of the catalunyans. whether you zoo or not, hope on your chariots and head toward the the coast. before you set off, stop in and get some bocadillos to bring with you- i love — for sandwiches (and somehow their donuts are insanely good) or my favorite cafe, El Cafe de la Pompeu, right across from my former universitat, El Pompeu Fabra. when you reach the sea you’ll be at the most touristy area of coastline, the beach of barceloneta, where you find all of the semi-subterranean restaurants that turn into clubs at night and open up right onto the sand. if you must visit one, i recommend Shoko– especially on tuesdays. you’ll also see the iconic two towers with frank gehry’s stunning aluminum fish sculpture. underneath his sculpture is a series of hidden paths and waterfalls. bike through here even though it feels dangerous to weave through all the tourists. from here, follow the boardwalk up the other side and simply continue north, biking up the coast and take in stunning views of the mediterranean. wander into Parc Diagonal Mar and play with all of the music-related jungle gyms. sit on one of the many industrial piers and gaze out over the sea, legs dangling. eat your sandwich.

head straight back down the coast and onward to the Passeig del Colom, passing through in time to catch an iconic sunset over the port, in the silhouette of the sacred Cristobal Colon statue. feeling fancy? bike all the way down the port and head up to the rooftop bar of the W Hotel, right along the mediterranean coast, to take in a caipirinha and some of the best views of the city. wander up avenida del paral.lel to Quimet y Quimet for one of the most authentic and quirkiest catalan tapas experiences in the city. it’s crowded, it’s loud, the wine comes in little juice glasses and the food with little to no explanation. enjoy it. once you have a taste, wander through El Raval neighborhood, Barcelona’s grungy art community. make your way through Mercat Sant Antoni, one of the oldest and most iconic markets in the city. following the Ronda de Sant Antoni up to Barcelona’s Gran Via takes you past the University of Barcelona, the Contemporary Art Museum, and lots of unique shops along the way to keep you distracted. if you’re hungry for dinner, stop into L’Oliva for contemporary Catalan fare and one of my favorite dinner spots in the city. after dinner, wander into Espit Chupitos, one of Barcelona’s many shots bars. choose from hundreds of shots, each a different adventure of sorts- stay away from the monica lewinsky (just take my word for it). from here, wander northeast along Gran Via and east into the gothic quarter to do some bar hopping.

DAY 3

a day of elevated exploration- heightened views rich cultural understanding. make sure your bring your camera, a sketch pad, and a sense of bewilderment.

start your day off by making a reservation- Parc Güell is free but entry into any of the iconic areas with the mosaic benches will require money and a reservation.

NOW, let’s set off into the beautiful northern area of the city today. starting with a cafe and croissant (find a place?) in the lovely neighborhood of Gracia, then head north toward Parc Güell. it’s a hike, but it will make the end worth your while. once you’re there, plan to lose yourself for at least two hours wandering through the tunnels and chambers of the creative genius of Gaudi. beyond the iconic mosaic lizard and meandering benches, there are also gnarly rock formations and caves made especially for echoey acoustics where you’re destined to find a didgeridooed busker or two. admire the views, pretend to run into javier bardem, pet the exceptionally well-groomed stray cats that are said to be decedents of Gaudi’s beard.

from there, head to either (or somehow, both) the Parc del Laberint d’Horta if you’re looking for a more natural and relaxing experience, with a challenging, huge cypress maze to wander through. this park is absolutely pristine and offers stunning, unique views of the city and plenty of hidden, romantic spots for a to feast over jamon and vino with a lover. or, head northwest up to the highest point in the city (don’t worry, there’s a funicular)- the antique theme park at Tibidabo and Temple del Sagrat Cor. it’s one of my favorite spots in the city, and equal parts sacred and adventurous. ride the ferris wheel. climb to the top of the winding staircase to view the city beneath the open arms of jesus. eat cotton candy. play human-size chess. now finish your churros y chocolate and get in line for the funicular, we have places to see! at the base of the funicular (how many more times can i say that word?) you’ll find my favorite spot in the city to have a glass of wine- i hope you catch it at sunset. Mirablau, which was built into the side of a mountain and consists primarily of one huge glass window, it’s the perfect place to relax after a day of hiking. if you want to stay here, the discoteca is just a treacherous staircase down the mountain, completely open-air, and features fantastic djs. BUT, i’d encourage you to continue on… we have some eating and drinking to do. head south back into the Gracia neighborhood to grab a quick bite at Flash Flash Tortilleria, a simple tapas bar offering way too many varieties of Spain’s sacred tortilla (need an explanation? ah, here comes one now…) or head to Paco Meralgo for more formal tapas and excellent seafood. grab a drink at the stunning Hotel Casa Fuster and find yourself transported into that scene from vicky christina barcelona. wander down Carrer Verdi for tapas, drinks, dancing, and culture. if you’re looking to burn the midnight oil, Sutton is one of the most famous discotecas in the city. if you have any issues getting in, act like you know Richard, the very distinguished looking gentleman at the door. he’d rather let you in than admit he doesn’t remember you- trust me.

DAY 4

ah, the modernist and historical soul of the city- let’s take it all in today. holding hands.

today don’t leave the house without- a porous mind or cerebral sponge, a sketch pad, a sense of wonderment, and those goddamn comfortable (yet stylish) shoes.

start your day making some reservations, again- you’ll be visiting two of the Gaudi houses (Casa Mila and Casa Battlo) and Sagrada Familia today, it might be a good idea to choose which ones you want to pay to enter and spend some time in. of the two houses, i recommend Casa Mila (aka La Pedrera). Sagrada Familia is amazing inside and out, and worth the money if you want to enter but you won’t be let down observing from the exterior.

you’ve already had a bit of a taste of gaudi with parc guell, but to truly get in the mindset of him you need to know a few things- he never made plans for his projects, preferring to construct them from a consciousness style of creation, allowing himself and the observer never to be inhibited by any mental or physical boundaries (arguably, why sagrada familia is still unfinished). he insisted on incorporating a strong influence of nature into all of his creations, which was something most modernists directly ignored- making him a pioneer in this movement and also one who couldn’t be defined by or associated with his peers. and he was unabashedly proud of his Catalan heritage.

on your way to Gaudi’s masterpiece, see his undeniable influence in the Hospital de Sant Pau, located in the northeast area of l’eixample region. part of the ruta de modernisme and designed by catalan modernist Lluís Domènech i Montaner, it’s still a functioning hospital and a modernist masterpiece.

if you happen to be in the neighborhood on a wednesday, book a tour at the historic Estrella Damm factory, barcelona’s regional beer since 1876. from there walk southwest to marvel at Gaudi’s yet to be finished masterpiece, la Sagrada Familia. it’s worth it to pay to enter- the stained glass, tall towers, and view into the limitless and nonlinear paths of his mind are impossible to comprehend but palpable to embrace from the interior. from there walk south west down avenuda diagonal to Casa Battlo and Casa Mila. both within 3 blocks of each other. walking tours through the inside take you through gaudi’s history as an architect, his devotion to catalunya, and his utter creative insanity. embark.

continue down toward the southwest edge of the city to Montjuic, to take in the Palau Nacional, now a stunning museum showcasing an impressive collection of catalan art and sculpture throughout history. have a glass of cava at the top of the steps, listen to the catalan buskers, and feel royal. the museum is definitely worth a visit, but the Font Montjuic fountain show cannot be missed. built for the 1929 barcelona international exposition by carles buigas, his original plan was thought to be too ambitious. the finished product is a flawlessly coordinated show of water, lights, and music. and magic. it plays every half hour during the warmer months. and i love it. so will you. especially when freddy mercury’s “barcelona” plays. hitch a ride up the hill behind the palace to Montjuic, the site of the ancient military fort and the 1992 olympics. wander around, take in views of the city and mediterranean horizon. if you’re there in the summer, catch an outdoor film projected on the side of the fort. schedule and tickets HERE. BYOWAJAL. (bring your own wine and jamon. and lover.)

if you aren’t exhausted yet, explore catalunya beyond it’s celebrated capital.

for day trips outside of the city, drive up through the costa brava and explore hidden beaches, charming medieval towns and fishing villages. Blanes, Cadaques, and Roses are a few not to be missed. pay a visit to the Dali Museum in Figueres, the only museum int he world curated by the actual artist and showcasing only his work- this museum is truly an adventure through his psyche- prepare to have your day transformed into a surreal dreamscape where the colors are still taking submissions, up is down and down is up, and time is fucking relative. i recommend a steady grip on reality and a bocadillo before entering.

OR, head west through the cava region of spain, paying a visit to the vineyard where the very first bottle of cava was made, Codorniu. the tour here is extensive and remarkable, taking you via trolley through the depths of their cellars, finally into the tasting room buried deep beneath the property. the property is beautiful, the cava is crisp- this is absolutely worth the trip.

go forth, hungry travelers.

in brooklyn our lives are often defined by contradictions. we sleep in the shadow of the world’s most infamous skyline and the flickering streetlight outside of our too-expensive shoebox apartment that we share with 3 other people in bed stuy. we wear ripped jeans and red lipstick to invite-only gallery openings on our way to a bushwick afterhours party. we chase a beer-and-a-shot with a beer-and-a-shot before a five course meal across the street. we look to elevate our lives in the most grounded way we know how. we let our reputation precede us.

this is us.

and to find a wine that meets the demands of this lifestyle, the hipster sommelier tells you to drink spanish wine. in a country that is smaller than texas, the wines of the region are more dynamic and distinct than the neighborhoods in our finicky little borough.

here i offer you a bit of my own exploration. inspired after attending Spain’s Great Match event this week with my partner in crime in chelsea, and having taken it upon myself to drink wine all over that wonderous land, i offer you the perfect spanish wine for every occasion. pop it open, let’s start drinking brooklyn.

The Housewarming Party in Bed Stuy.

Martin Codax Burgán Albariño from Rias Baixas, $17

gentrification! i’ll drink to that. it’s no new news, we’re all moving east. and to your friends who listlessly scour craigslist with their map set on greenpoint, the ones who constantly ask you to ask your landlord if he has any empty spots, the ones who get down on one knee and propose to you, over and over, just to get an in to your apartment… they finally concede and head south on the G or east on the L and find a place bigger and less expensive than yours. good for them! good for fucking them. after a long search, bring a wine that spells “relief” a-l-b-a-r-i-ñ-o. it’s fresh and light and encouraging. it comes with a sense of hopefulness. it’s a new start and it’s a full-bodied white from the northwest region of spain. my pick? Martin Codax Burgán. oh and drop by bedford cheese for a nice wedge of manchego because it pairs well with fresh and distinct mineral nature of this wine, along with a certain stubborn pride that says “i swear i don’t spend all my money on rent, look at this nice cheese.”

ah the listless and awe-inspiring achievements of your Brooklyn peers. we are all always doing something, aren’t we? and that’s really why we live here – to be inspired by each other and to continue to move up and forward and dream fucking big. so when it’s time to celebrate those accomplishments – an app launch, a blog publishing, a gallery opening, graduating from welding class, going back to school to study biodynamic food science, a spot on the coveted 30 under 30 list (ahem, there isn’t much time @brooklynmagazine!!!), or a 30th birthday (which is an accomplishment in itself!), bring them cava. the first sparkling wine ever made (suck it, champagne.) comes from that region that i am quite fond of. and my favorite, of course, is the original. the Anna Brut Cava from Codorniu, the first cava winery, ever. it’s feisty and fresh, bursting with potential and it’s a steal for $15. pop dat bottle baby.

The one to drink when you want to pretend it’s still summer.

Muga Rioja Rosado from Haro, $18.

it’s getting colder outside and you haven’t gotten used to the awkward banging from your desperate radiator and your favorite sweater smells like last year’s lover and you aren’t ready to get back into it. so don’t. instead, close the windows, let the radiator spew it’s mysterious contents into the air. throw your hair up carelessly. play this playlist. put on waterproof mascara, i don’t know. why the fuck not. because if we believe it hard enough, maybe we’ll skip winter this year. chill a bottle of rosé, from the rioja region. not quite as light as it’s french neighbor to the north, this rosé is darker, bolder, and lingers… just like that beautiful summertime skin. my favorite is the Muga Rioja Rosado. you can’t go wrong with anything from this winery or anything from the beloved town of haro. chill, pour, drink, repeat repeat repeat until june.

The first snowstorm.

Casa Mariol Vermut from Catalunya, $14.

well that didn’t fucking work did it. the winter arrives, after all. and let’s all admit it- the first glimpse of snow has us all a bit romanticized. we watch wide-eyed with our noses pressed against the foggy window. we run out and play in the street. we laugh and sing. we text our moms and ask to tell us again the rule about making snow cream out of the first snow. we say fuck it and put a bowl out on the fire escape anyway. we drink beers, lots of them, at all of our favorite neighborhood haunts that feel new again because everything outside has changed. and maybe we’ve changed a bit too. we toast and feel toasty and get toasted.

and then we hear it. the snow plow. it tears through the streets and into our hearts and turns all of the magic into a grey soupy mess that we’ll be trudging through until april. and so when the magic fades from the first few flakes, that is when we drink vermut. yeah. we’re drinking vermut. because in spain they drink it straight up, with ice or without. it’s warm and spicy. it’s dark and dangerous. like a new lover, embrace it and look deep into its soul but say nothing and give nothing away. it works out easier that way. my choice here is the classic Casa Mariol Vermut. pour it slowly and snuggle up.

For <del>808s</del> 212s and heartbreak.

Petalos Bierzo, $20.

to comfort a friend who has decided to throw in the towel after her 111 tinder failure but is masking it as “girls night”. the irony is not lost on me. i delete and download dating apps more often than i log in to my bank account. we all love them and hate them and are really fucking exhausted by them. so bitch about it with your friends. drink wine, share stories… about the one who yelled at the server because the oysters were too big before offering you some cocaine. about the one who showed up in a ferrari but had absolutely nothing else to say for himself. at all. and wouldn’t let you drive. about the one who didn’t tell you his age and turned out to be nearly older than your father. about the actor who couldn’t afford to take the train so you rode him back to his place on your bike. about the one, the only one, who got away. and for all the ones who could never hold on to you.

for these nights, drink bierzo. this ancient region is the rising star in the spanish wine scene, located in the northwest and known for old wines with fresh flavors. it’s deep roots and with promising beginnings… not unlike your dating life. haunting and exotic, this red draws you in like a lover and hangs on to you just long enough. swipe right with the Petalos Bierzo.

For the friend who’s leaving the city.

Quinta Milú, Ribera del Duero, $11.

so a friend is finally saying goodbye to all that. to all this. it happens all the time, for one reason or another. maybe it’s for a person or from a person. maybe it’s the hustle that’s exhausted them. maybe they head west, or overseas, towards an opportunity and a promise or to nothing at all. a bittersweet celebration, always. for this you need a wine that hits your tongue and fills your mouth and lingers long after it’s gone, it’s substantial, it speaks of age and significance. it’s long finish, a bravado that speaks to a complex history. for this occasion, a ribera del duero. wines that are defined as such because they grow along the lush banks of the ribera river. it’s deep and abundant and flows oh so freely. my favorite is the ever-so-charming Quinta Milu.

and so when I first moved to Spain I was delighted to be in a country that reveled these fruits as much as I did. it’s served as a simple accompaniment to almost every meal, rubbed onto crusty bread and sprinkled with olive oil and sea salt as pan con tomate. they grate it into tomato rallado as a sauce base, salad dressing, and the sticky, seductive secret to socarrat. of course, there’s the annual tomatina in buñol, outside of valencia. this quote from one spain’s most famous playwrights- pero sin tampoco olvidar el pa amb tomàquet

And of course, how dynamic a simple chilled tomato soup became as you travel through different regions. heading south to andalucia and gazpacho it is no longer gazpacho, the chilled, refreshing tomato soup you may be familiar with- it is salmorejo, a thick-based, garlic-laiden, dream of a substance that looks you straight in the eye and says to you, in that thick, distinctive andalusian way of speaking that you need to “tranquilo, nino- sientate aqui y por favor, disfrutate la vida.”

if you haven’t had it, you owe it to yourself- but beware, it may be impossible to go back to normal gazpachos, or really to eat anything else and not be thinking about it, for a while. this gazpacho runs down your throat and into your veins, your pores, until you become the gazpacho. and the gazpacho becomes you. and you are absolutely fine with that- it is not a resignation, it is an revelation.
try your hand in making it here- but don’t say i didn’t warn you.

ingredients

1 (4″ long) piece of baguette, crust broken off (note: this can be up to 4 days old.)

2 cloves of garlic

1 teaspoon of salt

12 whole blanched almonds OR 1/4 cup natural almond butter

1 cup extra virgin olive oil (preferably spanish, or andalusian hojiblanca)

2 lb ripe tomatoes, peeled, cored, and quartered

1/2 english cucumber, peeled, sliced, and quartered

1/2 yellow bell pepper, core and seeds removed.

2 tablespoons sherry vinegar

preparation

soak bread in water for 1 minute (or 2 min for 2-day old bread, 3 min for 3-day, etc), squeeze dry and discard water.

mash garlic to a paste with salt using a mortar and pestle. blend garlic paste, bread, and almonds in a food processor or with an immersion mixer and slowly add olive oil while blending, until mixture is thick and smooth. add tomatoes, yellow pepper, and cucumber pieces a few at a time, along with vinegar, and blend until smooth. force soup through a sieve into a bowl while saying things like “Who’s your daddy??!” or allow to pass through a food mill to remove any remaining solid pieces.

transfer to a jar and let chill for 2 hours before serving.

to serve

add- one soft boiled egg, cut in half. toss in a dash of jamon bits. drizzle with olive oil and sprinkle with spanish paprika. attempt to use a spoon although you know it’s a rudimentary tool for such greatness and that life is short- just assess what is appropriate given the company you are with and enjoy.

I will slice. I will sauté. I will beat, pour, wait. -inhale- flip, and eat. I spent 11 months in spain, and have a lifetime ahead of me- as an introduction became a desire, an affirmation is consummated, an embryo becomes a fetus becomes a silhouette becomes a heartbeat. I will at the very least come to understand the simple perfection that is- the tortilla de patata.

notes from the field (del campo):

“If you asked all of us teachers to make a tortilla, you would end up with 20 different tortillas- each person thinking there’s is the best.” so then what makes each one different? “It depends. It depends on how you cut the potatoes, on how many eggs you use, on how long you cook the onion… do you use onion by the way?” this was a question? I couldn’t help but question the integrity of a dish where you could reduce the list of ingredients by 1/3 and it was still acceptable. “Mine though…mine is the best.”
-Esther Hernandez, 1 nov 2013, teacher’s lounge.

“The secret?” They looked at each other and laughed. “Lots of practice, right?” She agreed. “I’ve been making tortillas everyday for about 8 years. It’s practice, and knowing just what each one needs,” she spoke of the omelet as if it was one of the students she served, sincere and frank.
-cafe de IES Manuel de Falla, 31 oct 2013

“The tortilla has 4 main ingredients- eggs, potato, onion, and love. The last one, that is the secret.” I gave him a sideways glance, the one that says- that was cute, now get real and tell me the damn secret.”Ok, my secret? My said, lowering his voice. “You must have very high heat. And patience. And when it’s time, make sure your moves are quick and direct.” he imitated flipping the tortilla as I sipped my caipirinha, wondering if we were still talking about cooking.
-Alvaro, arguelles, madrid. 6 nov, 2013

“This one. This is crap.” He said, as he grabbed a slice of the free tortilla and took a bite. “It’s crap but I am hungry.” I asked him why. “You try,” he said, handing me a slice. As I bit into it I was both angry and overjoyed. It was crap! And I could tell that it was crap! I felt like a novice wine drinker, spitting out an immature red for the first time at a tasting. I felt like a sailor finally gaining his sea legs, standing tall and unwavering during the storm. It was crap, CRAP I tell you!
-4 nov 2013, malasana, madrid.

As we sat in the plaza that night, surrounded by the pure history of Madrid- narrow streets, stone churches, street lights barely illuminating secret stone pathways down narrow alleyways, public fountains decorated with blue and white tiles, intricate ironwork showing faces and inscriptions. People moving along, basking in the moonlit of a cool autumn Sunday evening. Couples lost in embrace. And as he leaned over he pointed, and with all the reverence of a conquistador, finally bringing into vision the land he was seeking… and I knew he was going to share with me a secret of this mysterious city. “There,” he pointed, speaking slowly, with reverence. “There is where you will find the best tortilla in all of Madrid.”
-Xico, 13 October 2013, plaza de la puerta cerrada, madrid.

“so i hear this is where you come to have the best tortilla in all of madrid,” i asked, with a smile on my face. the waiter’s face turned from playful to grave in an instant. i was confused. “i must be honest- you cannot find that here. but i will tell you that everyone in all of spain will agree on who makes the best tortilla in all of the country,” he said. i leaned in. “their grandmothers.”
-juana loca, la latina, madrid, spain.

so here, i suppose, is the fruits of my research:

ingredients
3 large potatoes (of the russet variety or similar)
1 medium spanish onion
5 eggs
olive oil. lots of it.
salt

directions
peel potatoes and slice into slices about 1/8″ thick and about the size of half-dollars or so. slice onion, thinnish. heat a medium-sized, non-stick frying pan on medium high heat with some oil in it. add sliced potato and onion and enough oil to nearly cover them, about 1/4 cup of oil (really). add salt (don’t be shy here- we have 4 ingredients. the salt marries them all together.) cook, for about 25 minutes, or until the whole troop is soft and salty and maybe a few parts are slightly golden. flip only when necessary- mostly let these all sit and meld together into a love circle of magic. (this is a loose translation or a very technical spanish cooking term, of course.)

when potatoes are tinder, strain potato and onion mixture through a metal colander over a bowl, capturing all of the residual oil (this can be reused on any dish, just keep in mind that it will be quite onion-infused.) let these sit and cool and mesh.

once they are cool, crack all eggs into a bowl and add just the teeniest splash of cold water. beat like crazy.
slowly mix in egg and potato- do not beat anymore, just mix.

heat pan over med to med-low heat. add a tiny pinch of the infused oil. once hot, pour in egg-potato-onion mixture all at once.

this is where things get serious.

shake pan gently as this cooks, letting the heat permeate evenly but the mixture not get too attached to the pan. slowly begin to work a spatula or other such tool around the edges, peaking to see how things are firming up as you shake gently.

grab a round plate that will fit inside the frying pan, covering the surface of the tortilla. when the tortilla is just firm but still quite raw on top, place plate upside-down over tortilla.

with one hand pressing plate tightly to the pan, FLIP the whole sha-bang over. don’t be scared, don’t hesitate. DO IT.

you should have a semi-done tortilla on the plate, raw-side down. now shimmy the raw side onto the frying pan so it begins to cook. begin to work the sides of the tortilla with your spatula, gently tucking in the sides and consequently puffing up your proud little tortilla.

after just a few minutes it will be done. the ideal tortilla is still runny on the inside but just firm enough to stay together. slide back onto the plate, let sit for 5 minutes.

slice, share, eat, die.

It was my first experience really traveling alone. it was weird leaving my hostel and not planning a route with someone else, not asking if anyone was hungry, not checking if we should stop for coffee, just popping in wherever. And this was nerve wracking not only because I was alone, but because Sevilla is laid out as if an ADD spider wove a web as its streets and I am utterly directionally-challenged. Upon my initial excitement the first day I let myself wander aimlessly and excitedly for about 5 minutes and realized I had no clue what direction I’d come from and sat down and looked at the map. After days of exploring the city somewhat aimlessly, every time I returned “home” at night, a new friend who worked at the hostel would always ask me if I’d finally gone to Plaza España. Each day I had gotten lost, or distracted, or the line at the cathedral had taken too long, or I’d ended up sitting in a botanical garden and writing and feeling so fulfilled that I didn’t even think twice about what I could be missing out on.
My last day in Sevilla, David told me again, this time in a much more serious tone. “Liz. you have to go see it. Tomorrow, first thing you do.”
So I did. Even though I was tempted to get distracted by so many beautiful things, I walked in the most direct meandering pattern the narrow streets allowed me to, and I arrived at the place on the map that seemed to tell me I was there, at my destination- Plaza España. I looked around. There was a fountain or two, some vendors. a stone walkway between some trees. I immediately began to question my new friend.

I followed the path and turned a corner beside a nondescript building and what appeared in front of me literally took my breath away. I remember having to grab a nearby railing for a minute, to sturdy myself as I closed my eyes. And when I opened them again I still couldn’t believe what I was seeing. And at that moment I understood the indulgent magnificence that it is to travel, and especially to travel alone- to soak in every bit of that site, of your feelings, of your thoughts- to appreciate a moment so much, to feel the breath in your lungs and the ground beneath your feet yet still feel incapable of comprehending how beautiful the world is.

and then to dare yourself to take another step.
